| As the Director of Food-Nutrition and Environmental Services at South Shore Health, Ruth Seamone knew the benefits of healthy eating. She also believed that her work place was the ideal starting point for a healthy eating initiative. So she formed a committee that included dietitians, the food supplier, and the food service staff. They called their initiative: Step into Healthy Eating.
Ruth’s idea was simple, yet multi-dimensional. First, give people a choice. Fruits, vegetables and other healthy meal ideas were added to South Shore Health’s cafeteria menus at an attractive price. Second, give people information. The food service staff was educated about healthy eating, and table tents and nutrition information signs were put up around the cafeterias. Lastly, and just as importantly, create an environment that encouraged people to make a change. A change for life.
It’s working. Today, those healthier choices are hot sellers on the menu.
